Carus Vini
Carus Vini, established in the 1990s in San Casciano in Val di Pesa, Chianti Classico, is dedicated to sustainability in wine production. The estate follows Integral Agriculture principles, avoiding chemicals and using nitrogen-fixing crops between vineyard rows. They rely on manual harvesting and avoid irrigation, ensuring a minimal environmental impact. The winery also meets a significant portion of its electricity needs through solar panels, reinforcing their commitment to eco-friendly practices while maintaining a focus on high-quality wine production.
The vineyard spans 13.5 hectares on calcareous clay hillsides at 300 metres above sea level. Planting was overseen by renowned oenologist Giacomo Tachis, who worked on iconic Super Tuscans like Sassicaia and Tignanello. The vines are carefully tended to balance growth and productivity, with grapes hand-harvested in multiple phases to ensure only perfectly ripe fruit. Guido Carissimo, who took over the estate in 2011, combines his family’s winemaking heritage with a passion for sustainable practices, crafting wines that reflect both tradition and innovation.
