What a wine! This is an incredible Basque wine and is one of co-founder Toby's favourites. 100% Hondarribi Zuri with 5 months on the lees and minimal intervention.
Tasting notes:
Clear and aromatic. Minerality on the nose, especially granite and racy, fresh herbs. The mouthfeel has a touch of oil reminiscent of the best Rieslings, with notes of honey blossom, honey, Granny Smith apples and under-ripe pear.
Not your typical Txakoli, this has a style and expression of its own.
Food pairings:
Beautiful paired with seafood or baked white fish.
About the winemaker:
Juanjo Tellaetxe is a priest by profession. Making wine seems to be how his devotion comes into being. He manages the family vineyards that surround his Basque country house located in the Valle de Arrastaria, surrounded by mountains that protect its microclimate.

This is a natural wine. Absolutely incredible taste, and impressive sustainability credentials - minimal intervention, organic practicing but uncertified. Vegan. Thoughtful and expertly crafted.
