Van Zyl Du Toit is the winemaker here at Allée Bleue. He focuses on using the natural environment to his advantage, making use of the great biodiversity of the estates as well as engaging in sustainable practices along the way. The vineyards host varietals that are well suited to the drier environment in Franschhoek such as Chenin Blanc, Pinotage and Shiraz. Allée Bleue also plays host to some more well-known international varieties such as Cabernet Sauvignon and Merlot.

As well as having a keen eye for great quality juice, Van also loves to experiment with “expression of site”. Including the use of amphoras and large oak barrels in the maturation process.

Travelling back some hundreds of years, the French Huguenot’s discovered that the terroir of the Franschhoek wine valley was the ideal platform for growing high quality grapes, to ultimately produce fine wines. This is why the farm, now known as ALLÉE BLEUE , was established back in 1690.

Much happened over the subsequent 300 years, with ALLÉE BLEUE eventually being brought back to life with great dedication and attention to detail by Friedrich-Wilhelm Dauphin , his late wife Elke and daughter Antje .The result is a fascinating combination of typical South African farming tradition, contemporary lifestyle, art and nature. The family have owned ALLÉE BLEUE since 1999, introducing a new passion to the land, which is now home to vineyards that produce some of the world’s most outstanding and award-winning wines.

The Family Dauphin have had a long-time love for South Africa and it’s people for more than 30 years now. Their family name has French roots and with the late Mrs Elke Dauphin’s family history in winemaking , a wine farm named ALLÉE BLEUE, in the Franschhoek valley, seemed to be a perfect fit.

Vinification: The grapes were sources from selected mountain vineyards in the Banghoek area, a ward in Stellenbosch for their individuality. After harvesting,and cooling, the grapes were sorted, crushed and then put in red wine fermenters and a cold soak done @ 7° C for 4 days. After inoculation with selected yeast, the pump over’s started on all but the Merlot on which we prefer to do manual punch down to extract the colour and flavour. Extended maceration of up to 24 days also lends depth of flavours and structure. The finished wine underwent MLF in barrel and further maturation for 18 months before carefully putting together the blend prior to bottling. All the barrels used were French oak and 60% were new and the rest 2nd fill.
