Aromas of warm brioche, golden apple, and ripe stone fruit lead to a rich, elegant palate with creamy depth, refined freshness, and subtle spice. The long, focused finish unfolds with baked apple, citrus peel, and toasted almond, carried by a distinctive chalky minerality.

Pairs beautifully with refined yet flavourful dishes such as butter-poached lobster, seared scallops, or roast chicken with truffle jus. It would also complement creamy mushroom risotto, aged Comté or Gruyère, and lightly spiced dishes like miso-glazed cod or duck with orange.

At the heart of The Weyborne Estate’s rise lies the vision of founder Nick Clarke — a geologist-turned-entrepreneur who recognised the incredible vinous potential of this elevated site in the South Downs. With vines planted from 2007 onward on chalk and greensand soils at nearly 190 m above sea level, Nick’s mission has been to craft world-class English sparkling wine rooted in terroir, altitude and patience.

Guiding the cellar with flair is French winemaker Benjamin Abric, who joined the estate in 2022 and brought an international pedigree and clear stylistic intent to the cuvées. His approach emphasises fine mousse, deep autolytic character, low dosage and the expression of site-specific minerality rather than chasing imitation of other regions.

Nestled high on the rolling hills of the South Downs National Park in West Sussex, The Weyborne Estate stands at approximately 190 metres above sea level — one of the highest vineyard sites in England. Originally a historic estate dating back to the 17th-century manor built by the Yaldwyn family, the site was revitalised in the 21st century for viticulture, with vineyard plantings beginning in 2007 on chalk and greensand soils that bring natural freshness and minerality to the wines.

The Estate now comprises some 10 hectares of vines planted across several blocks of Chardonnay, Pinot Noir and Pinot Meunier, all grown as a single-vineyard site so that the wines reflect this place alone. Surrounded by ancient springs, changing diurnal temperatures and sweeping views across pasture and woodland, the Weyborne estate creates wines grounded in site, altitude and elegance.

Cellaring: Drinking now, can be cellared for the next 3 to 5 years.

Vinification: Crafted using the traditional method from Chardonnay, Pinot Noir, and Pinot Meunier, all hand-harvested and rigorously sorted. A small portion of Chardonnay is barrel-fermented for added texture, while all base wines undergo full malolactic fermentation and extended lees ageing of around three years for depth and finesse. Sourced from high-altitude chalk and greensand soils in the South Downs, the wine’s vinification focuses on purity, minerality, and refined freshness, with a low-dosage finish that highlights its elegant, terroir-driven character.
