Not only do they decorate the label, but they also impart a natural minerality to the wine. A wine of character and depth. This Cuvée Ammonite is as rare as a Dodo burger, with only a few hundred bottled every year.

Robe of deep gold. Complex nose of marzipan, custard, and stone fruit (Mirabelle plum) on a mineral background. The attack is slightly buttery, marked by the long ageing in barrels. The wine is ample and fat but the finish is very dynamic, and airy. Outstanding persistence of the aromas.

Service: Serve chilled at 7-13°C.

Food Pairing: Excellent with pork, poultry, fish, shellfish, pasta in white sauce, cheese, and vegetarian dishes.

The 5.5-hectare 3rd generation domaine is located in Solutré, planted on hillsides.

This area is a little hotter with less frequent rainfall than other areas in the north of Burgundy. These Mediterranean influences mean that the grapes ripen slightly faster than in the other winegrowing areas of the region which influences the personality of the wines. Limestone sub-soil lies across much of the terrain.

Domaine Bouchacourt Denis is a small three generations family-owned estate established in Solutré. The vineyard is located exclusively on hillsides. Cultivation takes place without chemical fertilizers, herbicides, insecticides or synthetic fungicides. Manual harvesting. Vinification and ageing in accordance with the characteristics of each vintage. Awarded a HVE "High Environmental Values" Label.

Annual Production: 600 bottles.

Cellaring: Ready to drink now.

Vinification: Pneumatic pressing, sedimentation of the mud, temperature control, and thermo-regulation. Complete alcoholic fermentation. Long maturing: 24 months in top-grade oak barrels (for the first 12 months, 50% in new barrels and 50% in barrels already used for 3 years – for the second 12 months, in barrels already used for 5 to 6 years to give the wine a more “civilized” style). Very old vines.
